Bluefin Tuna (Maguro) Story | Sea to Sushi Shop
Japan's most prized bluefin tuna comes from a town called Ōma where a HON-MAGURO auctioned in Tsukiji once fetched $1.4M (2003). Oma Maguro is a brand. Just the location it's caught increases the price of the tuna by as much as 20%! I traveled to the town on the tip of Japan's Honshu Island in Aomori prefecture to find out if the taste lives up to its reputation.

Sushi may be Japan's most popular food. There are all kinds of sushi -- high end to cheap, high-tech conveyor belt sushi to supermarket and convenient store sushi. There's nigiri, maki, gunkan, narezushi, temaki ... It's all pretty good and each offers a unique experience, but add this one to the list.
The sliver of fish is rested on a 1/3rd sized grain of rice. My guess is that it's 1/300th the size of normal sushi since the rice is only 30% the size of 1 full grain! It requires special chopsticks to position it and a real challenge for any sushi chef.

Tokyo's Maguro Sushi Set, the A5 Wagyu Steak of the Sea
Maguro (Tuna) Sushi is best eaten in Japan, of course, and no place is fresher than Tsukiji Market ー but wait! The tuna auction has moved to Toyosu 3km / 1.8mi down the road and Tsukiji market is closed, right? Not exactly. Tsukiji’s inner market (where the main fish market was located) is gone but the outer market is open where some of the best sushi shops in Tokyo still exist! One of them is Sushi Zanmai, my favorite chain shop where price meets quality for an excellent everyday sushi fix. Joining me to rate the maguro sushi is Mikey Chen from Strictly Dumpling who is having sushi for the first time. Before trying it at the high end places, it's best to try it here.
Japan sushi tycoon pays record tuna price
A Japanese sushi boss has paid a record $3.1m (£2.5m) for a giant tuna at the first new year's auction in Tokyo's new fish market.
Self-styled "Tuna King" Kiyoshi Kimura bought the 278kg (612lbs) bluefin tuna, which is an endangered species.
He spent more than twice the previous record of $1.4m, which he paid in 2013.
Wholesalers and sushi company owners often pay high prices for the best fish at the first pre-dawn auction of the new year.
"I bought a good tuna," Mr Kimura told AFP after the auction.

So how will it work? Scanning food is a relatively simple process, but recreating it is what the team is currently pouring all its efforts into.
Like its namesake, the Pixel Food Printer stacks tiny 5-millimeter cubes of colored, flavored gelatin in the shape of scanned food. Ultra-precision machinery ensures that all the cubes go to the right places.
